Thanks to the collaboration and commitment between the Plant, the Industrial Management, the Research and Development department, and the Commercial Management, the production of Cooky SIL has been successfully launched!
Mosaico Specialty Papers produces its silicone paper for food in Line 1 of the Sora plant: the uniqueness of the paper mill allows the flawless application of the silicone barrier, which contributes to making this product so remarkable.
The external silicone layer, which allows the easy release of food, is the result of precise and delicate chemistry; moreover, to obtain the desired porosity level, Mosaico specifically selected short birch fiber for the production of Cooky SIL.
As part of the continuous machine production process, the refining step required particular innovations and attention, including the purchase of a new benchtop porosimeter. Even the lab tests to qualify and assess the product have been updated and optimised: specific equipment allows the measurement of the quantity of silicone in g/m², while the bakery test (also called stick test) assesses the detachment of a standard dough from the baking paper. This last test is carried out in the most "realistic" way, that is... baking actual cakes!
Cooky SIL: strength and excellent release properties in industrial and domestic baking
Cooky SIL is available in two versions, both made in weights of 39, 40, and 41 g/m²:
- Cooky SIL, the multipurpose baking paper which can therefore be reused several times keeping excellent levels of release
- Cooky SIL Smart, a disposable baking paper with good release standards.
Available in reel and sheet formats, Cooky SIL is safe for food contact, 100% recyclable and, upon request, FSC® and PEFC certified.
